Bacon Cheeseburgers

If I had to pick a favorite meat-based burger, this would be it. You can make the patties a day in advance and keep them in the refrigerator until you're ready to grill. These bacon cheeseburgers may not be the beacon of nutrition, but they're worth the indulgence. Bacon drippings make the burgers extra juicy and flavorful.
  • 8 slices thick cut bacon
  • 1½ lbs / 860 g Ground beef
  • 2 Tablespoons Bacon drippings
  • 2½ teaspoons Kosher salt
  • ¾ teaspoon black pepper
  • 4 slices Cheddar cheese (or your choice)
  • 4 Good quality hamburger buns
  • Ketchup
  • Mustard
  • Sliced tomatoes
  • Lettuce
  • Thinly sliced red onions
  1. Remove ground beef from refrigerator 1 hour prior to mixing.
  2. In the meantime, preheat oven to 375ยบ F. Arrange 8 slices of thick cut bacon on a rimmed baking sheet. Bake for 16-18 minutes or until very crispy, but not burnt.
  3. Remove bacon to a paper towel lined plate and reserve the bacon drippings.
  4. Using a large fork, combine the ground beef, 2 tablespoons reserved bacon drippings, salt, and black pepper. Form into 4 equally sized patties. Keep patties refrigerated until ready to use.
  5. Grill burgers for 6-8 minutes per side, depending on desired level of doneness.* Place cheese on burger during the final minute of cooking.
  6. To assemble, place the grilled patties on the hamburger buns. Top with two pieces of bacon, ketchup, mustard, lettuce, onion and tomato.
*If weather or lack of grill prevents you from grilling these burgers, simply preheat a heavy bottom skillet, preferably cast iron, on the stove over medium-high heat and cook the burgers in the skillet for 3½-4 minutes per side.
